Savory Lemon Nut Salmon
This savory lemon salmon recipe is both healthy and delicious, sure to please the most delectable palate, and is easy, too! Whether you choose farm raised or wild caught salmon, you can leave the skin on. When selecting salmon fillet, make sure the thickness of the salmon steak is as even as possible so that it cooks evenly.
Lemon Salmon Ingredients:
2 lg salmon fillets (place skin side down)
2-3 Tbsp fresh lemon juice
1/2 C Dijon mustard
1/4 – 1/2 C honey
1/2 to 3/4 C coarsely chopped pecans (also try walnuts or blanched almonds for a nice variety)
Directions:
Place the salmon fillets (skin down) in a shallow non-stick baking dish (or spray your baking dish with non-stick spray). Drizzle fresh lemon juice onto the fillets.
In a separate bowl, mix the Dijon and honey, blending thoroughly. Set aside some of the honey-mustard mixture to serve at the table, and spoon the remaining sauce over the salmon.
Sprinkle chopped nuts over the fillets and bake at 350 degrees for 15 to 20 minutes (or until the salmon separates easily with a fork). It should be moist and flake apart easily. Be careful to not overcook.
